This quick and easy orzo salad is absolutely delicious. I bet you I had you at “quick and easy” ;)
What I used:
One small red onion, chopped
2 cups of uncooked orzo
2 cups cherry tomatoes, sliced in half
Tahini dressing (recipe here)
1/2 red pepper chopped
1/2 yellow pepper chopped
1 large tomato, cubed
1 can of corn
1 can of black beans
1 cup thinly sliced chives
1 cucumber, cubed
1-teaspoon sea salt
1/2 lime, juiced
1/2 teaspoon freshly ground black pepper
- Prepare the pasta according to the package directions.
- Prepare the dressing and combine it with orzo.
- Add all the remaining ingredients; mix the salad well and season to taste.
I usually serve this salad with some baked zucchini and yellow squash slices and lime wedges. It’s a perfect dish to have on those days when you don’t have much time to cook or want to enjoy something quick, light and tasty. It also tastes great when served cold, which makes it a perfect dish to have for lunch at work or school.

Lime can be so refreshing and add such a zesty pop to food, and the baked zucchini looks ultra delicious <3 You're a wonderful cook Paula, I wish I could be more like that, truth is though I usually burn anything within reach haha! :)
