Grapefruit & Avocado Salad with Poppy Seed Dressing

Avocado and grapefruit salad recipe

Few days a go I told you guys that I have started reading a new book “The Glass Kitchen” by Linda Francis Lee. As the title suggests, the book has much of a culinary background behind it, at the end, the author even provided a few recipes. I tried one of those recipes and added my own touch to it, as you can guess today’s recipe is inspired by the “The Glass Kitchen”.

Grapefruit and Avocado Salad with Poppy Seed Dressing

1 avocado, sliced
1 grapefruit peeled and sectioned into small chunks
1 butter lettuce (Boston lettuce) washed and cut into small pieces (you can also use any other sweet lettuce blend)

Poppy Seed Dressing

1/3 cup good quality olive oil
1/2 cup lime juice
2 TBS white vinegar
2 TBS onion powder
3 TBS mayonnaise (I use vegan mayo, I usually get it at Trader Joe’s)
1TBS poppy seeds
pinch of sea salt
3TBS of onion powder
About 10-13 stevia drops (you can also substitute with 1/3 cup of sugar instead, if you’d like)

Mix all the ingredients for the dressing together, until smooth. Add some more salt and/or pepper to taste, if needed. On a plate, arrange a bed of lettuce, top off with few pieces of grapefruit and few slices of avocado. Pour some of the poppy seed dressing on top. This salad is great to enjoy during those hot and sunny Summer days. It’s a perfect combo of creamy, citrus-y and sweet flavors.

    That looks delicious! BTW, I watched yesterday “Fat, sick and nearly dead” as you suggested and now I wanna buy a juicer!! Soon there’s no room for all the kitchen supplies I’m getting :D.

    Avocados are a vegetable I’m not that fond of but if anything is going to change my perception of them it will be this gorgeously amazing recipe Paula! :D Love that you were inspired by ‘The Glass Kitchen” too, sounds like an adorable book. I adore dressings with seeds, I always think they add so much flavour and enticement to a recipe and this is certainly no exception ;) Really loving that you’ve added grapefruit into the mix too, a sweet, citrus-y and creamy combo sounds like an absolute dream! <3

    Once again love how you've added your own imaginative touch to a recipe, you are so talented and creative in the kitchen :)

      Haha, I used to hate avocados too. It’s only been about a year since I became crazy about them and add them to everything now :)

      Aww thank you so much Sophie, I merely changed up the dressing a bit, that’s all :) I was thinking about adding some sweet onion to it, but wasn’t sure how it would affect the whole composition. Maybe I’ll try to mix it up a bit next time :)

    Ok, I know you get these recipes from other sources but can you please make a cookbook of some sort where you find all of your favourite things and make them and take pictures of them? I never thought I could crave a salad late at night, but now I do. So, good job you’ve done the impossible haha!
