Today’s recipe has got to be one of my favorite go-to “fancy” lunch recipes. Mixed organic greens with a Brie cheese toast topped with chopped walnuts and raw chocolate cacao nibs. It’s fancy, but it’s simple. Sounds weird, tastes awesome.
Brie cheese toast on mixed greens (makes 4 portions)
For the salad dressing:
1/2 organic lemon, zested
1/2 lemon, juiced
1 tsp finely chopped shallots
2 tsp organic agave syrup
1 tsp thyme leaves
1 clove of garlic, minced
1 tsp Dijon mustard
sea salt, to taste
tsp of hot water
1/4 glass of olive oil
Fort the toast:
2 tsp of each chopped walnuts and raw chocolate nibs
4 slices of whole grain bread
4 slices of Brie cheese
1. Preheat the oven to 400F (or about 200C), in the mean time to prepare the dressing mix together all of the ingredients except for the water and olive oil. Once everything is mixed well add warm water and slowly add olive oil while mixing everything together at the same time.
2. Place a piece of Brie cheese on each slice of bread and bake for about 6-7 minutes or until the cheese melts.
3. Grab a handful of mixed organic greens and put it on a plate, pour about a TBS of the prepared dressing over the salad and finish off with placing a toast on top. Divide the nut and chocolate mixture evenly into four parts, and top each toast with it.
This little salad has everything it. A bit of sourness from the lemon zest, a nice kick from the Dijon mustard, the Brie cheese adds creaminess, agave and dark chocolate give a combo of sweet/bitter flavors while the bread and walnuts add a bit of crunchiness. If you prepare the dressing ahead of time (I made more than I needed and store it in the fridge) this will take you minutes to prepare. If you want to impress someone but don’t have time (or will) to spend hours in the kitchen preparing a meal, this salad should do the trick ;) .

I love anything with a lemon-y vibe (actually eat slices raw, can you believe), so this just adds to the appeal of the recipe for me. I love the sweet/sharp contrast of flavours, I can just imagine this tastes like no other recipe in the world! Would love to attempt this one day. I think this recipe would be the kinda thang Obama and Michelle would have for lunch! Fancy, impressive and certainly worthy of serving up to a celebrity (or president) ;) :D
