These raw caramel bites are my go-to snack, whenever I start craving something sweet.
Bonus? These aren’t only sweet, and also a little crunchy.
Sweet and crunchy is a perfect combo and these are so quick and easy to make. I always have all of these ingredients in my kitchen: dates, cashews, almonds, coconut flakes- they’re definitely my snack staples. I love snacking on almonds and fresh berries, but sometimes I feel like I need something *extra* sweet to satisfy my cravings. It’s easy to just grab a piece of candy and this why I don’t ever buy any candy bars (except for dark chocolate) even the “healthy” and vegan kind. If I don’t have it, I won’t eat it- and most of the time my cravings don’t get so bad to the point where I’d actually be willing to get in a car and get something from the store.
If you have ten minutes and know how to boil water, you can definitely make these. Dates are nature’s caramel and have that deep, sweet flavor that I just love. These are a perfect treat, regardless of whether or not you’re plant-based. I guarantee that you’ll love them. I should give you a warning though, these are highly addictive and after making a batch yesterday, half is already gone- that’s how much I and my husband love to snack on these.
RAW CARAMEL BITES
Ingredients:
1lb dates, pitted (should be sticky, if not, soak them in water)
1 cup cashews
1/2 cup almonds (raw, unsalted)
1 TBS water
1/4 cup coconut flakes (unsweetened)
Place all ingredients in a blender or food processor and blend until well combined. Optionally, you can also add a little sea salt to these. Once everything is well combined, form little balls using your hands or a melon baller. If you can’t form little balls easily, it’s probably because your mixture came out a little too dry, simply add a little water and blend. You can also substitute cashews and almonds with macadamia nuts. After forming your little bites, store them in a fridge in an air-tight container. This will make about 35-40 little bites/balls.
I know that a lot of people are very skeptical about trying out healthy recipes, especially when it comes to desserts. I know that I was, when I first started making changes to my diet. I’ve always thought that eating healthy meant eating “bunny food”. What I realized after a while, was that you can still have delicious and satisfying dishes while eating healthy AND you can still indulge as well. Honestly, after you try these you’ll be all like “Kit Kat, who?”
